Recipe: Easy Chicken Quesadillas

I love quesadillas. They are super easy, quick, and delicious. Quesadillas are so versatile. You can make them with any meat, or no meat and go for an awesome vegetarian dinner! This recipe, as them all, has been boyfriend approved! Keep reading to see what you'll need and how to do it! 

1/2 White Onion - chopped
1/2 Yellow Bell Pepper - chopped
1 C Cooked Chicken - shredded
4 Flour Tortillas
1 C Mild Salsa
1/2 C Fat Free Sour Cream
1 Bag of Shredded Cheese

1. Preheat the oven to 350ยบ and toast 2 of your tortillas until golden brown on each side. While that's going on, cook your onions and peppers on medium high heat in a skillet until tender, about 15 minutes.

2. Mix in your shredded chicken with the onions and peppers. Divide the mixture between the two tortillas. Top with as much cheese as you would like, saving at least 1/2 C for the end. Place a new tortilla on top both "cheese mountains" and put back in the oven for at least 15 minutes.

3. Once the cheese is all melted, remove form the oven and slice them up! Serve on plates and top with salsa, sour cream, and cheese. You could add whatever your heart desires.
